Celebrate Toledo's Specialty Foods Product Development Competition


Northwest Ohio is rich with specialty or signature products developed locally but recognizable regionally and nationally. The Center for Innovative Food Technology is encouraging food entrepreneurs to develop additional similar products. In an effort to foster activity, CIFT is conducting a Food Product Development Competition.

Entrepreneurs with ideas on new products or chefs with signature sauces will have the opportunity to advance an item into the marketplace. A restaurant could enhance profit potential through a value-added product that becomes a staple within households or an entrepreneur with a recipe handed down from generation to generation could start a business. However, creating a food product according to regulations, good manufacturing practices, and with increased batching poses significant challenges and can leave creative minds wondering where to begin.

The Center for Innovative Food Technology will guide the developer through the appropriate procedures required to take a concept and make it a reality. The selected application will receive product and process development assistance, nutritional analysis, shelf stability testing, information relating to label regulations, business planning assistance and more.

"The ideas for product development are numerous but most often stall due to lack of understanding of the procedures to advance forward," comments Rebecca Singer of the Center for Innovative Food Technology. "By providing the services and information required to the winning applicant, it is our goal to have another signature item showcasing Northwest Ohio’s uniqueness.”

To kick off the second annual CIFT Food Development Contest Jack and Gayle Sparagowski of Ski’s Polish American Restaurant, one of the 2008 Product Development Contest winners, were featured Monday during production of their sweet sauerkraut balls. These samples will be used to obtain consumer feedback as they continue to advance the product into the market.
